2 Hände voll frische Erbsen, blanchiert 2 Zucchini, fein gewürfelt 1 Frühlingszwiebel, in Scheiben geschnitten 3 EL Pistazienpulver 1 TL Zitronensaft Wasser nach Bedarf Salz und Pfeffer nach Geschmack
Alles im Mixer pürieren. Mit Salz und Pfeffer abschmecken. Natürlich ist meine Crema verde ideal für die sizilianischen Falafel, die ich vor ein paar Tagen gepostet habe. Aber nicht nur das – wie wäre es auf einer Pasta? Und dazu Burrata? Ein Wow für den Gaumen.
