🔹️بز قورمه، یکی از غذاهای سنتی کرمان است که در گذشته با گوشت بزغاله با بافتی بسیار لطیف و خوشمزه درست میشد و به همین دلیل، نام این غذا را بزقرمه (قرمه بزغاله) گذاشتند؛ اگرچه در حال حاضر این غذا بیشتر با گوشت گوسفندی تهیه میشود. در زمانهای دور که افراد به یخچال دسترسی نداشتند، برای نگهداری گوشت، آن را قورمه میکردند؛ فرآیند سختی که همچنان در میان مردم روستاها و عشایر استان کرمان از جمله شهر بابک جایگاه خاصی دارد. آنها برای قورمه کردن گوشت، بزغاله را در اواسط پاییز ذبح میکردند و سپس پوست آن را بهصورت خیکی میکندند تا از آن مشک درست کنند. سپس قبل از طلوع آفتاب، لاشه را بهاندازه قیمهای درمیآوردند...
