پنیر تاریخچه بسیار طولانی به قدمت حدود ۱۰ هزار سال دارد. به دنبال انقلاب کشاورزی در بین‌التهرین و شروع دامداری، به تدریج کشاورزان متوجه شدند که شیر به تدریج ترش شده و لخته‌هایی در آن تشکیل می‌شود که منبع غذایی مناسبی بود. پنیر از مهمترین اختراعات بشر است. بشر معمولا توانایی هضم لاکتوز شیر را ندارد ولی پنیر با لاکتوز بسیار کم توانست به عنوان منبع بسیار غنی پروتئین و املاح و کلسیم در طی تاریخ برای بشر باشد. پنیر به عنوان سهمیه غذایی در لوح‌های بین‌التهرین ذکر شده است و به تدریج اهمیت مذهبی پیدا کرد. قدیمیترین شواهد وجود پنیر در یک ظرف سفالی از ترکیه امروزی (۷۰۰۰ سال ق.م) یافت شده است. با کشف مایه پنیر تولید آن ساده تر شد و پنیرهای بسیار متنوع تولید شد. اکثر پنیرهای معروف امروزی مانند پنیر پارمزان در صومعه های اروپای قرون وسطی اختراع شده‌اند. امروزه پنیر هنوز از مهمترین منابع غذایی دنیا است.

The news also helped traders look past another report showing decades-high inflation and shake off some of the volatility from recent sessions.
